First my mom makes the dough with my Kitchen Aid mixer that we just started using last year. Until then they had been using one from 1970. Then my aunt Evelyn kneads it and distributes it to the rest of us. We each roll out our own dough and cut the raviolis with ravioli cutters. Here's Aunt Evelyn getting the dough ready.
Here is one of the batches of raviolis. We freeze them on these pans and then place them in freezer bags until Christmas Day.
Each ravioli is counted and all the important notes along with the total number of raviolis is recorded on this board.
And here is the final shot of the production crew. Aunt Pat, Kathy, Aunt Evelyn, Mom(Melodie), and Me and Madalyn. Notice the flour all over our clothes, we really work hard. The final total for 2007 was 293 raviolis!!! Great job ladies!
